It can also be something other than vanilla sauce: Fried Apple Rings with a fluffy Berry Foam.
Wash the apples, cut into slices approx. 5 mm thick and carefully remove the core with a small round biscuit cutter.
Next, add flour, beer, 50 g of icing sugar and salt, and stir until a dough is formed. Separate the eggs, add the egg yolk to the dough and remove the stiff egg whites. Put the frying fat in a pan and heat up. Roll the apple slices in the dough and fry in the hot fat until golden brown.
Next, let the fried apple slices cool on a plate with kitchen roll. Mix the berries, 20 g of icing sugar and water and finely puree in a blender. Beat an egg white until stiff and mix with the berry mixture.
Pour through the iSi Funnel & Sieve into a 0.5 l iSi Whipper, screw on 1 iSi Cream Charger and shake vigorously. Leave to cool in the refrigerator for a min. of Cool for 6 hours.
