Pressure-Marinated Pears

  • 2 ×Pear (peeled, cut into wedges)
  • 80 gsugar
  • 30 ghoney
  • 50 mlapple juice
  • 150 mlwater
  • 1 ×star anise
  • 1 ×cinnamon sticks
  • 2 ×clove
  • 0.2 mlWhiskey


Caramelise the sugar, then add the honey and deglaze with the whiskey. Flambé carefully. Add apple juice and water, bring to the boil, add all the spices, the pear slices and citric acid, and simmer together for 2 minutes.


Then pour everything into a 0.5 L iSi Gourmet Whip and let it cool uncovered. Assemble the Rapid Infusion Set and screw on an iSi Professional Charger.


For optimal results, allow to infuse for 2 hours.
