Ingredients
- 3 ×lemon grass
- 6 ×Kaffir leaves
- 0.5 ×ginger root
- 500 ml42 Below Vodka
- 20 mlsugar syrup
- 15 mllime juice
- 30 mlpassion fruit puree
- 400 mlmilk
- 100 mlvanilla syrup
- 4 tsp.Pro Espuma
Preparation
Rapid Infused Vodka
Add lemongrass, kaffir leaves, fresh ginger and vodka into a 0.5 L iSi Gourmet Whip. Install the iSi Rapid Infusion Accessories according to the instructions on the iSi Gourmet Whip. Screw on 1 iSi cream charger, shake iSi Gourmet Whip vigorously and let rest for 5 minutes. Then vent the iSi Gourmet Whip rapidly by pressing the lever. Unscrew the device head from the iSi stainless steel bottle and let rest the flavored liquid again for a short while.
Vanilla espuma
Mix milk, vanilla syrup and Pro Espuma and pass through iSi Funnel & Sieve directly into a 0.5 L iSi Whip. Screw on 1 iSi cream charger and shake vigorously.
Star Martini
Put 5 cl Rapid Infused Vodka together with the sugar syrup, lime juice, passion fruit purée and ice in a shaker and shake vigorously. Pour the cocktail into a cocktail glass, cover with vanilla espuma and decorate with half a passion fruit.
iSi Tip: Vanilla Espuma
For a 1 L iSi Whip, double the ingredients. Screw on 2 iSi cream chargers one after the other and shake vigorously after each charger.
