Apple Three Ways

A dessert for autumn and winter - and not just for apple fans.

  • 100 mlheavy cream
  • 30 mllemon juice
  • 20 gvanilla sugar
  • 200 gmascarpone
  • 200 gcanned applesauce
  • 30 mlrum
  • 1 gground cinnamon
  • 24 gpowdered sugar


Stir all the ingredients until the sugar has completely dissolved.


Pour the mixture through a fine sieve and into a 0.5 l iSi Whipper. Screw on 1 iSi Cream Charger and shake vigorously. Let the filled Whipper cool in the refrigerator for a min. of 6 hours.




Serving suggestion

For the apple compote, caramelise the sugar and deglaze with apple juice. Add the cinnamon stick. Add the apple cubes, simmer for approx. 5 minutes and allow to cool. Put the dried apple slices and apple cream in layers, add the lukewarm apple compote and serve.
