- 500 mlgin
- 3 ×Earl Grey (Teabags)
- 20 mllime juice
- 10 mlsugar syrup
- 30 mlpeach pulp
- 1 ×soda water
Preparation
Rapid Infused Gin
Pour Bombay Sapphire Gin with the tea bags into a 0.5 L iSi Gourmet Whip. Install the iSi Rapid Infusion Accessories on the iSi Gourmet Whip. Screw on 1 iSi cream charger, shake iSi Gourmet Whip vigorously and let rest for 5 minutes. Then rapidly vent the iSi Gourmet Whip by pressing the lever. Unscrew the head from the iSi stainless steel bottle and allow the flavored liquid to rest briefly again.
Tea Thyme
Fill the iSi Sodamaker Classic or iSi Soda Siphon with cold water. Screw on 1 iSi soda charger and shake vigorously. Put 4 cl Rapid Infused Gin together with the lime juice, sugar syrup, peach pulp and ice in a shaker and shake vigorously. Pour the cocktail into a beaker, sprinkle with fresh soda water from the iSi Sodamaker Classic / iSi Soda Siphon and decorate with a sprig of thyme.

For particularly sparkling soda, refrigerate for 1-2 hours.
