Goat Cheese Espuma
Ingredients for a 0.5 L iSi Whipper:
A wonderful treat when combined with special breads
- Ingredients:
- 250 g Goat cheese with herbs
- 125 g Sour cream
- 125 ml heavy cream
- 45 ml Olive oil
- 1 g Salt
- 1 g Pepper
- 1 g Sugar
Preparation:
Puree the goat cheese, olive oil, sour cream, and spices in a blender
until smooth and pass through the iSi funnel &
sieve. Stir in the cream, so that the mixture has a compact
consistency. Put into a 0.5 L ( ~ 17 fl. oz) iSi whip cream canister,
screw on 1 iSi cream charger and shake vigorously. Refrigerate for
1-2 hours.
Serving Suggestion:
Serve on nut bread or wholewheat bread.
iSi Tip:
Can also be used in catering.
Double the ingredients for a 1 L (~34 fl. oz.) iSi Whipper. Screw on 2
iSi cream chargers one after the other. Shake vigorously
after attaching each charger. Halve the ingredients if using a 0.25 L
(~8.5 fl. oz.) iSi Whipper.
