Tuna Espuma

Ingredients for a 0.5 L iSi Whipper:

Light and fluffy

  • Ingredients:
  • 200 g Tuna (in olive oil)
  • 200 g Cream cheese, full fat
  • 100 ml heavy cream
  • 1 g Salt
  • 1 g Pepper


Drain the tuna and puree with the cream cheese in a blender until
smooth. Add the cream and season with salt and pepper.
Pass through the iSi funnel & sieve directly into the 0.5 L iSi Whipper,
screw on 1 iSi cream charger and shake vigorously.
Refrigerate for 1-2 hours.
