A good waffle is a thing of beauty. It’s light, airy and crispy; the perfect combination of flavour and texture. But getting that perfect waffle can feel like a struggle sometimes.
To get that yummy, light texture, most recipes call for baking powder in the batter instead of something like yeast or soda, which would give you a more dense result. This also makes it tricky to get those nice crispy edges, as they will remain soft no matter what you do.
So how do you make the perfect waffle? The answer lies in the technique – not only with your ingredients but also with your tools. Here are some helpful tips to make that perfect, airy crisp waffle every time!
Ingredients
- 220ml milk
- 2 ×egg(s)
- 10g butter
- 1g salt
- 180g flour
- 7g Stevia granules
Preparation
Mix all of the ingredients together to form a smooth dough. Sweeten if necessary.
Pour the mixture through the iSi Funnel & Sieve directly into a 0.5 l iSi Whipper. Screw on 1 iSi Cream charger and shake vigorously.
Serve with icing sugar, whipped cream and currants.
If you are using a 0.25 l iSi Whipper, halve the ingredients and Screw on 1 iSI Cream Charger. For a 1 l iSi Whipper, double the ingredients, screw on 2 iSi Cream Chargers one after the other and shake vigorously after each Charger.
Tip
Alternatively, 15-18 drops of liquid stevia or 25 g of icing sugar can be used instead of Stevia granules.
