Austrian Liptauer Espuma

Austrians love Liptauer! Especially if it's as fluffy as this Espuma.

  • 100 gcurd cheese (quark)
  • 200 mlchicken stock
  • 150 mlcream, 33% fat
  • 15 gpaprika powder
  • 20 gtomato paste
  • 10 ganchovy fillet(s)


Mix quark, stock, paprika powder, tomato paste, and anchovies.


Stir in the cream and season to taste with the spices.


Then strain directly through the iSi Funnel & Sieve into a 0.5 l iSi Whip. Chill for at least 3 hours. Screw on an iSi Professional Charger and shake approx. 12 times.

The iSi technology turns the otherwise dense spread into an airy dip!
